Recipe Suggestion

"Anticuchos", a traditional Peruvian dish with a water buffalo twist:

Ingredients for antichucos:

1 lb water buffalo heart, trimmed and cut into small pieces
1/4 cup red wine vinegar
1/4 cup vegetable oil
2 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Wooden skewers, soaked in water for at least 30 minutes

Instructions:
In a large bowl, mix together the red wine vinegar, vegetable oil, garlic, oregano, cumin, paprika, salt, and black pepper.

Add the water buffalo heart pieces to the bowl and toss to coat with the marinade. Cover the bowl and refrigerate for at least 2 hours, or overnight.

Preheat a grill or grill pan to high heat.

Thread the marinated water buffalo heart pieces onto the soaked wooden skewers.

Place the skewers on the grill or grill pan and cook for 2-3 minutes per side, or until the meat is cooked through and slightly charred.

Serve the skewers immediately with a side of Peruvian salsa criolla (recipe below) and boiled potatoes.

Ingredients for salsa criolla:

1 red onion, thinly sliced
2 limes, juiced
1 tablespoon chopped cilantro
1 tablespoon olive oil
Salt and pepper to taste


Instructions:

In a medium bowl, combine the sliced red onion and lime juice. Let the onion marinate in the lime juice for at least 10 minutes, or until the onion starts to soften.

Add the chopped cilantro and olive oil to the bowl and stir to combine. (For more kick, you can add diced hot peppers, such as jalapeño or serrano.)

Season the salsa criolla with salt and pepper to taste.

Serve the salsa criolla alongside the water buffalo antichuchos.
