Water Buffalo Petite Tender Medallions in a Red Wine Reduction:

Ingredients:

1.5 pounds water buffalo petite tender, cut into 1-inch thick medallions
2 tablespoons olive oil
Salt and black pepper to taste
1 shallot, finely chopped
1 cup red wine
1 cup beef or vegetable broth
2 tablespoons butter
Instructions:

Season the water buffalo petite tender medallions generously with salt and pepper.

In a large skillet, heat olive oil over medium-high heat.

Sear the medallions for about 2-3 minutes on each side until nicely browned. Remove them from the skillet and set aside.

In the same skillet, add the shallot and sauté until softened.

Pour in the red wine and bring it to a simmer. Allow it to reduce by half.

Add the beef or vegetable broth to the skillet and continue to simmer for a few minutes until the sauce thickens slightly.

Stir in the butter to enrich the sauce and give it a velvety finish.

Return the water buffalo petite tender medallions to the skillet and cook for an additional 2-3 minutes, or until cooked to your desired level of doneness.

Remove the medallions from the skillet and let them rest for a few minutes.

Slice the medallions against the grain and serve with the red wine reduction sauce drizzled over the top.
